While the beef was cooking, I put together the Salisbury steak.
1 egg
1/2 cup dry bread crumbs (these were made from left over buns we didn't use. I just let them sit for a day or 2 until they were dry and then crushed them)
1/2 chopped onion
1/4 can cream of mushroom soup (save remainder for the gravy that goes over the steak)
1/2 teaspoon each salt and pepper
2 pounds ground beef
Beat egg in mixing bowl. Add remaining ingredients and squish with hands until mixed well.
Form into 8 patties on waxed paper. I will only be using 4 steaks, so the other 4 I froze flat on a cookie sheet and then put them in a freezer bag when they were frozen. Make sure you label with date and contents. When you are ready to cook them, broil on rack until brown, about 4 minutes. Turn and brown on other side until done. You can also use a panini pan or George Foreman grill.

1 package onion soup mix (I didn't have any so I made my own..recipe to follow)
1/2 cup tomato sauce
10 saltine crackers, crushed
1 1/2 pounds ground beef
Form into a loaf and wrap in foil. Double wrap if freezing. Label with date and content. Otherwise, place in baking dish and bake at 375 for 1 hour.
Yeah! Now I have 3 (because I made twice as much Salisbury steak, I can count that as another meal...so actually, I made 4 meals) meals ready to go for another time.
Here is the recipe for onion soup mix.
1 cup minced dry onion
3/4 cup beef bouillon powder
1/2 cup onion powder
1 tablespoon salt (use less if you need to limit your sodium...that's the beauty of making things from scratch...you control the ingredients that go in it)
1/2 teaspoon pepper
Measure ingredients into a container with a lid or storage bag. Shake until well mixed.
1/4 cup equals 1 package
